What's for lunch? Piece a PIZZA

So today I had a little extra time and I decided to run my own little home-based pizza shop. I could call it: Barboli's. I was frustrated with getting my kids to school late 2 days in a row mostly because all 3 of them have been relying on me to get their lunches packed, their breakfasts made, and their backpacks stuffed. Thankfully, I've at least trained them all to take showers and used the bathroom by themselves. :)

So I decided I needed to do something about the lunch situation because that has been taking WAY too much of my valuable morning time. I've been trying for a while to come up with lunch solutions that all of my kids will enjoy and that I can prepare in advance and simply pull out of the refrigerator or freezer. Last month I got together with a group of friends and we made pizza pinwheels but, for some reason, those didn't go over so well with my kids. So I thought, why not just pizza? Why make it complicated? My kids all LOVE pizza and they'll eat it cold or hot. And it's a balanced meal and it's good for them to eat. At least I feel good about packing it in their lunches.Why? It's made with 50% whole wheat flour, it is topped with tomato sauce (which happened to be organic this time), it has cheese with protein in it and it has a little bit of fatty pepperoni and sausage for some flavor.

Here's a photo of four of the pizzas I made. They look so good fresh out of the oven, don't they? Actually, the three on the left are all freshly baked. The one on the right is about to go in the oven. There was another in the oven plus three more balls of dough waiting there on the counter to be made into hot delicious pizzas. I made eight in all, but I served half of them to my family and their friends for dinner.

   One of my kids was failing his math class for most of the year and I just now noticed! In my defense, this kid is 17 years old and was able to keep a B average or higher all of the other years of high school. I guess I patted myself on the shoulder too soon for a job well done. Awkward Confessions About My Kids

My teen and tween don't shower very much, ugh gross! My children don't bathe regularly and I'm okay with it. Well... not really, not when I'm sitting next to them, or hugging them good night, or when I have to pass by them, or when they're standing next to someone I admire, or when they're talking to other people we know, or when they're anywhere outside of their bedrooms.... Kids grow up too fast!

The year was 1999, it was December and everyone was worried about Y2k. Would our digital world come to a silent halt as the date in the computers changed to 2000? Would the world be in complete chaos as every automated product stopped working from one change in a number at midnight on January 1?
